How to Make Bacon Wrapped Jalapeno Poppers

To start I recommend wearing gloves when working with raw jalapenos. If you don’t wear gloves then be very careful not to touch your face while preparing the jalapenos and wash your hands thoroughly when you are done. I also highly recommend having a Jalapeno Corer tool to make this process much easier.

To prepare the jalapenos wash them and cut off the stems, using a corer tool remove as much of the membranes and seeds as you can. I do this over the garbage can or sink to keep the mess down. Once you have deseeded the jalapenos slice them in half length-wise and clean out any remaining seeds. If you prefer more spice you can leave a few seeds intact.

Next mix together the softened cream cheese, sharp cheddar cheese, and granulated garlic. In a small mixing bowl combine the ingredients with a rubber spatula until they are completely combined or add all of the ingredients to a stand mixer and mix for 1 minute or until the cheese mixture is smooth.

Spoon a few teaspoons of the cheese mixture into the halved jalapenos pressing it in to fill the jalapeno but don’t overfill them.

Cut the bacon pieces in half and wrap each halved jalapeno with half of a piece of bacon, To secure the bacon start at the bottom of the pepper and wrap it around tightly. If needed secure the bacon with a toothpick, if the bacon is not secured it will shrink up and fall off during the cooking process.
