Precooked Instant Pot Chicken can be used in so many ways for easy dinner meal prep and quick and healthy lunches. Today I’m using Instant Pot Shredded Chicken to make an easy healthier version of chicken salad. Just because it’s healthy doesn’t mean it has to be bland. Instant Pot Chicken Salad with grapes, nuts, dried cranberries will become a regular meal prep recipe.

How To Make Healthy Chicken Salad

To start pre-cook the chicken. If you need step-by-step instructions on how to cook a whole chicken in the Instant pot read this. To pre-cook chicken breast follow the instructions in the full recipe. If your in a pinch or short on time you can use a good quality canned chicken breast if that’s what you have on hand. Once the chicken is cooked, shredded, and cooled you’re ready to turn it into healthy chicken salad.

Easy Healthy Chicken Salad Recipe

For this recipe you’ll need:

  • Pre-cooked and shredded chicken 
  • Red grapes
  • Dried cranberries
  • Chopped celery
  • Chopped pecans
  • Plain Greek yogurt
  • Dijon mustard
  • Sea salt
  • Black pepper
  • Parsley (optional)
  • Dill (optional)

Plain Greek yogurt is an easy ingredient swap when preparing recipes you’re trying to make healthier. For a healthier mayo option, I really like the Primal Kitchen Mayo with Avocado Oil, I get it at Costco or online at Walmart. For today’s recipe, I’ll be using my favorite plain Tillamook Greek Yogurt.

You’ll find lots of chicken salad recipe variations, but one of the best parts of chicken salad in my opinion is the fresh red grapes. I love the juicy but crisp texture of grapes in a chicken salad together with pecans and celery for the perfect flavor combination.

Chicken salad is best if it has a chance to sit for an hour or two after it’s been made which is why it’s the perfect meal prep lunch recipe. This recipe can be made ahead of time and stored in an air-tight container for 3-5 days. Portion chicken salad out using these Snapware containers for easy grab-and-go lunches.

From Scratch Chicken Salad

Once you have your chicken salad made you can serve it over romaine lettuce, on a buttery croissant, with a side of pita crackers, or, my personal favorite in a spinach tortilla wrap.

For different flavor combinations, you could substitute apples for red grapes or yellow mustard for Dijon mustard. Don’t get too concerned if you don’t have the exact ingredients use what you have and make it your own. The beauty of Instant Pot Shredded Chicken is it’s an easy and simple way to prep ahead for quick and easy recipes.

Healthy Chicken Salad made simply with pressure-cooked shredded chicken.

Ingredients

  • 1.5 lbs. chicken breast
  • 1/2 Cup red grapes halved
  • 1/3 Cup dried cranberries
  • 1/4 Chopped celery
  • 1/4 Cup chopped pecans
  • 1/2 Cup plain Greek yogurt
  • 1 Tbsp. Dijon mustard

  • 1/4 tsp. Sea salt

Instructions

  1. Pressure cook chicken breast on manual high for 10 minutes with full natural release.
  2. Carefully remove chicken breast and shred using two forks.
  3. Refrigerate shredded chicken for 2 hours or until completely cooled.
  4. When the chicken is completely cooled add halved grapes, dried cranberries, celery, and pecans.
  5. Add Greek yogurt, parsley, dill, and sea salt.
  6. Stir to combine ingredients.

Make-ahead chicken salad and store in individual airtight containers for easy grab-and-go lunches.
